Catch Of the Week – Yellow Perch

Quick Facts: Yellow Perch is sourced from Lake Erie but caught and processed in Canada.  The fish is caught wild and only lives in fresh water.  When cooked it is mild and delicate in flavor.

How to Prepare: Before buying any fish check on its quality using our Fresh Test.  This fish is best prepared pan fried, baked, or deep fried with the skin on.  It is not recommended to grill since it is so delicate.  We love pan frying since you can customize your seasonings and make a big batch for dinner parties easily.    Another easy alternative is to dredge it in our Louisiana Style Corn Meal Crumbs from our Market and fry in oil (and do not worry about the skin, it is so thin you won’t be able to tell its there after cooking).
