The Thanksgiving feast has come and gone and now there are only fractions of side dishes and appetizers. What to do now? Try some of these fun techniques to incorporate your Thanksgiving leftovers.
If you have extra shrimp, make a yummy shrimp salad or shrimp dip. To make shrimp salad, take the tails off and chop into cubes. Add mayonnaise, leftover cocktail sauce or sriracha sauce (a spicy Asian sauce), finely chopped onions, and chopped flat leaf parsley. Toast up artisan bread and leftover buns for a zesty, light sandwich. For shrimp dip, soften cream cheese, add chopped green onions and leftover cocktail sauce. Serve with crackers or toast points.
Rethink your standard salmon dish by adding leftover cranberry compote. Simply brush salmon with olive oil and lemon juice and season with salt and pepper. Grill on an indoor grill pan skin side down. The rule of thumb for any seafood is to cook for 10 minutes per inch of thickness. Add leftover cranberry compote as a glaze.
