Not only do we have an outstanding supply and fresh shipment of Swordfish in the house, we currently brought in this bright-colored beauty, a Pumpkin Swordfish. From time to time, we will bring in this orange fleshed favorite when the moon phase is high and the catch is just right! The color of the swordfish meat can vary depending on what the fish has been feeding on. The orange color of our pumpkin swordfish indicates that it has been feeding off of krill and shrimp for its distinct color. The color variations are no indication of quality, however flavor may change. High quality meat remains firm, with cut surfaces shiny and smooth.
Why is the orange color a valued pick? The taste! Pumpkin Sword is known for its sweet taste and tender, juicy meat. Swordfish are great cooked in a couple of ways; most oven grilled but can be baked or broiled as well.
Center cut… yes please!
