Feast of Seven Fishes- Baccala Recipes

Continued from our last blog on the Feast of Seven Fishes, here is a start to some of our favorite Holiday recipes. Our first featured traditional item- Baccala, also known as salted cod, which has been preserved by drying after salting.  This preparation method is often very popular around the holidays and included as a main dish during the Feast of Seven Fishes. This tradition holds true for many families worldwide.

 Below are some of our favorite recipes, also available in the Euclid Fish Market! 

SALTED COD IN TOMATO SAUCE

  • 3 tablespoons olive oil
  • 1 medium onion, sliced
  • 2 tablespoons tomato paste
  • 1 cup water
  • ¾ teaspoon pepper
  • 1-1/2 pounds soaked baccala
  • 2 tablespoons shelled pine nuts
  • 2 tablespoons white raisins

Place oil in large skillet, add onion and brown.  Add tomato paste, water and pepper and cook for 5 minutes.  Add fist cut into 4 inch squares, pine nuts, and raisins and cook for 20 minutes.  Taste and add salt, if needed. Serves 4.

 

SALTED COD WITH GREEN OLIVES

  • 1-1/2 lb. soaked baccala
  • ½ cup flour
  • 3 tbsp. olive oil
  • 1 small onion
  • 2 tbsp. Tomato paste
  • 1 cup water
  • 2 small vinegar pickles, chopped
  • 1 tbsp., capers
  • ½ lb. green Italian olives, pitted
  • ½ tsp., pepper
  • 1 tbsp. chopped parsley

Skin fish and cut into 4 inch squares.  Dry and roll flour. Heat 2 tablespoons olive oil in large skillet, add fish and brown well on both sides.  Remove fish from skillet and keep warm.Add 1 tablespoon olive oil to oil remaining in skillet, add onion and brown. Add tomato paste and water and cook for 3 minutes.  Add pickles, capers, olives, and pepper and return fish to skillet.  Simmer 20 minutes, basting fish occasionally with tomato gravy.  Taste and add salt if needed.  Add parsley and serve. Serves 4.
